Ingredients
Whole Wheat flour - 1 cup
Some chopped cilantro
Carom seeds - 1/2 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1/2 tsp (optional)
Salt to taste
For scrambled Eggs stuffing / Anda Bhurji
Eggs - 3
Onion - 1 (finely chopped)
Green chilies - 3-4 (finely chopped)
Some chopped cilantro
Cumin seeds - 1/2 tsp
Olive oil - 2 tbsp
Salt to taste
Procedure
- Take a flour in a mixing bowl. Add turmeric powder, carom seeds, garam masala, chopped cilantro and salt to taste. Start kneading the dough by adding little water at a time. Consistency of the dough should be soft like regular chapati dough. Apply few drops of oil on top and cover it. Let it rest for 15-20 minutes. Meanwhile, make the eggs stuffing for paratha.
- Heat oil in a pan. Add green chilies and cumin seeds. Let them splutter. Add chopped onion and salt to taste. Saute till onion turns translucent. Break the eggs in a pan and mix well. Reduce the heat and cook for 2-3 minutes. Keep stirring continuously. Finally add chopped cilantro and switch off the heat. Let the stuffing cool down.
- Take a medium sized ball of a dough. Roll it like a small puri. Roll the edges, keeping middle part thick. Place scrambled eggs stuffing on it. Close all sides of stuffing with edges of dough. Dip into flour and roll it gently and evenly. Roast it nicely from both the sides by applying oil/ghee. Serve hot with any chutney, pickle or ketchup.
