Ingredients
Green Hyacinth Beans - 1/2 lb (Wash the beans well. Split the beans in a medium sized pieces by removing threads and ends).
Onion - 1 (Finely chopped)
Small tomato - 1 (chopped in cubes)
Cloves of garlic - 3 (minced)
Roasted peanuts powder - 2 tbsp
Red chili powder - 1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Goda Masala / Garam masala - 1/2 tsp
Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Pinch of asafoetida
Turmeric powder - 1/2 tsp
Curry leaves - 5-6
Salt to taste
Procedure
- Heat oil in a a pan. Add mustard seeds, cumin seeds, pinch of asafoetida and curry leaves. Let them crackle. Add chopped onion and saute till translucent.Add minced garlic and saute for few seconds. Add tomato cubes and saute for 3-4 minutes.
- Add red chili powder, coriander powder, cumin powder, goda masala and salt to taste. Saute till oil starts to separate from spices.
- Add beans and little water. Mix well and cook for 10 minutes. Keep stirring in between. Finally, add roasted peanuts powder and chopped cilantro. Again cook for 5-6 minutes. Serve hot with roti.

I never liked this bhaji when I was young although my mom made it very well, and I want to try your version of this bhaji, will have to make and see how it goes with my munchkins.
