Ingredients
Potatoes (medium sized) - 3 (Boiled)
Onion - 1 (sliced)
Green chilies - 2 (finely chopped)
Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Pinch of asafoetida
Curry leaves - 5-6
Turmeric powder - 1/4 tsp
Lime juice - 1/2 tsp
Sugar - 1/4 tsp
Salt to taste
Cilantro for garnishing
Procedure
- Peel off the skin of boiled potatoes and cut into medium sized cubes. Keep them aside.
- Heat oil in a pan. Add mustard seeds, cumin seeds, pinch of asafoetida and curry leaves. Let them crackle. Add sliced onion and saute till translucent. Add turmeric powder and salt to taste.
- Add potato cubes and mix well. Cover the pan and let it cook for 4-5 minutes. Stir in between. Finally, add sugar, lime juice, and chopped cilantro. Mix well and again cook it for a minute. Serve hot with chapati or puri.
Lovely potatoes...this is almost the stuffing they use as masala for dosas, don't they? Of course the urad and chana dals are missing... bookmarking it!
