Ingredients
Potatoes - 2 (Peel and cut into cubes, put into water)
Matar / Frozen green peas - 1/2 cup
Onion (medium sized) - 1 (finely chopped)
Tomato - 1 (cut into cubes)
Ginger garlic paste - 1 tsp
Red chili powder - 1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Dry mango powder - 1/2 tsp
Garam masala - 1/2 tsp
Oil - 3 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 4-5
Pinch of asafoetida
Turmeric powder - 1/4 tsp
Dry fenugreek leaves / kasoori methi - 1/2 tsp
Salt to taste
cilantro for garnishing
Procedure
- Heat oil in a pan. Add mustard seeds, pinch of asafoetida and curry leaves. Let them crackle. Add ginger garlic paste and saute for few seconds. Add chopped onion and saute till onion becomes translucent. Add tomato cubes and saute till they get mashed up with onion. Add red chili powder, turmeric powder, coriander powder, cumin powder, dry mango powder, garam masala and salt to taste. Saute till oil starts to separate from spices.
- Add potato cubes and little water. Cover the pan and let it cook for 8-10 minutes. Stir in between. Once the potatoes are cooked, add frozen green peas, fenugreek leaves and chopped cilantro. Let it simmer on low heat for 5 minutes. Serve hot with roti.
